HISTORY
«Very Pinot Noir» alone embodies the richness of our terroir. The Haute Vallée de l’Aude terroir brings freshness and finesse to this Pinot Noir. Exceptional conditions, combined with vineyard practices that follow our “Protect Planet” charter, allow us to harvest the finest grapes to craft this wine.
VINEYARD
Our plots, on clay-limestone soils, are located in the terroir of the Haute Vallée de l’Aude.
GRAPE VARIETY
100% Pinot Noir.
VINIFICATION
Fermentation in open vats with regular punch-downs to promote maceration and limit oxidation. The wine then undergoes light barrel aging for 4 months.
TASTING NOTES
Garnet robe with bright highlights, aromas of red berries, and subtle notes of violet and sweet spices. This Pinot Noir, grown on the cool slopes of the Haute Vallée de l’Aude, reveals a silky and elegant palate with well-integrated tannins.
MATCHING WITH FOOD
Perfect to enjoy with duck breast and cherries, mushroom risotto, or characterful cheeses such as Saint-Nectaire, Morbier, or Tomme des Pyrénées.
